Company & Our Vision
Century Hospitality Group is a collection of original, thriving boutique restaurant & bar concepts based in Edmonton, Alberta Canada.
Founder Chris Lachance began with a single restaurant, Century Grill in 1999, as a local company supporting local companies. Through the years the company has grown, it has bought and it has sold, and today this dynamic, growing restaurant group encompasses 6 unique concepts with more than 400 employees. Being local and supporting local is not something to boast about, it’s just the right thing to do, and that’s how they’ve always done it.
Dining in one of CHG’s properties should be an experience. They create gorgeous, contemporary settings, highly flavourful, fresh, innovative cuisine, and offer attentive, gracious hospitality.
They’re passionate about the restaurant industry, dedicated to the craftsmanship of food & beverage, and strive to create memorable dining experiences.
We are proud of our restaurants & bars and we cordially invite you to be our guest.
Chef Tony Le
Tony began his culinary career following his mom around the kitchen as a child but you could say his true education began at 16, when he took a job as a dishwasher. He started like most great chefs; at the bottom and worked his way up thru the ranks.
His early passion for sushi initially lead him to become a young sushi chef. But that wasn’t enough for Tony, so he enrolled in the culinary arts program at the Northern Alberta Institute of Technology, while apprenticing at Edmonton’s Crown Plaza Hotel. Upon completion of the program in 2004, Tony’s passion for food and the industry was very evident and that’s when he joined the Century Hospitality Group.
After almost two years of working with CHG, an opportunity to explore new adventures in another part of the country came calling and Tony left the nest to pursue launching a new concept restaurant in the Okanagan.
Tony’s skills and talents were real and his development was swift – a chef of his caliber was in high demand and Century Hospitality Group needed to get him back as their growth plans were beginning to take off as well at this time.
Tony moved home and became an integral part of the culinary leadership at Century Hospitality Group working alongside Chef Paul Shufelt. He’s been at the helm of four of Century’s kitchens and been a driving dynamic force in every new restaurant & bar launch since coming back in 2006.
While developing his skills as a Chef, Tony also developed his palate as a sommelier. Earning his WSET Level 2 with honors. He has written various local articles and appeared on many media outlets sharing his love and knowledge of anything food related and when he’s not in the kitchen he can be found sipping wine and enjoying his love for art.
For Tony, who grew up with food and family hand in hand, food is about creating memories with family and friends. Tony’s vision for Century Hospitality Group is to make memories that are an extension of our people and our suppliers. Whether it’s the chefs preparing the meal or the servers bringing it to the table, his intention is always to exceed the expectations of our guests with playful, interactive, beautiful, delicious food and to create a warm, lasting memory.
Tony is a calm, cool & collective leader. His people skills are second to his cooking skills, but almost equally as important when you’re leading & inspiring a collection of kitchens and role players that are so crucial to the success of his businesses.
